The Gorria pepper is an emblematic variety of southwestern France, in the Espelette region of the Basque Country. The pepper is consumed in powder form, strung together, or fresh. Characterized by elongated fruits that ripen from dark green to bright red, this chili pepper gives off a distinctly fruity and slightly smoky flavor. In cooking, Gorria chili peppers are appreciated dried, fresh, or ground. They are used as a condiment or finishing touch in dishes.
This chili pepper variety is the first to date to benefit from a Protected Designation of Origin (PDO), which guarantees the quality and expertise associated with its production. The PDO defines the geographical area of cultivation, which extends across ten municipalities in the French Basque Country, as well as criteria for harvesting, processing, and quality, notably its red color and size between 7 and 14 cm. Of course, we indicate that this is this particular chili pepper variety, but it is not the source of the chili pepper officially originating from Espelette.
